Pineapple upside down cake

I use the pineapple pulp as the base for upside down cake instead of canned rings or chunks. Since I am also gluten intolerant I use the Betty Crocker Gluten Free yellow cake mix. Makes me feel like I am eating "real" dessert.
I plan on trying carrot pulp in my GF muffins.
