Moist, rich muffins, no grains or dairy

Here is a yummy muffin recipe that is SCD legal, contains no grains or dairy.

Combine in a food processor:
- 1 cup fresh carrot pulp
- 1 very ripe banana
- 1/2 cup almond meal/flour
- 2 eggs
- 1/4 to 1/2 cup honey, to taste
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp salt

Process until smooth.
Add:
1 cup medium shredded coconut, unsweetened

Process just until mixed. Spoon into 6 lightly greased muffin tins, lightly rounding the tops. Bake at 350* for about 30 minutes. They come out best if they bake slowly. Muffins are done when a knife inserted comes out clean.

I always use my pulp!

The first time I made apple juice (with apples from my own trees) with my Jack LaLaanne juicer I thought, "What a waste of good pulp." I made apple-walnut muffins and they were really tasty. Now I always use the pulp. The green vegetable pulp makes great muffins and breads, but I especially like mixing it up with egg, ground nuts, and whole-grain breadcrumbs and making burgers or veggie "meatloaf." I just hate to see anything go to waste. Also, I freeze the citrus zest and use it for baking.

I am SUPER excited... just bought a juicer and was looking for things to do with the pulp... even though some might believe it's a waste... I'm very excited to use it as a replacement for other ingredients that have equal to or less nutritional value. Thank you sooooo much. I'm very excited to try this out :-)

Muffins from juicer pulp

Very good use for the carrot and apple pulp from my Jack Lalane Juicer. I used whole wheat flour.
