Is Oxalic Acid harmful eaten in raw vegetables?

by Pat Merkel
(Courtenay, B.C., Canada)

I love parsley, lettuce, broccoli, cauliflower, sweet potatoes, bananas in my drink.

But recently I have been reading on the Net about Oxalic acid and its really harmful effects.

Could you allay my fears of kidney stones, etc., from this acid?

Pat Merkel

Sara says:

Oxalic acid is not a concern unless you have a history of kidney stones. In which case, there will be a tendency to absorb higher levels of oxalate and may cause a problem.

We need to be mindful that there are two forms of the oxalic acid: "organic" and "inorganic". When taking them in fresh/raw form, they are "organic" and your body is able to fully utilize them. But when you cook them, they turn "inorganic", rendering them useless for the body, thus accumulated in the kidneys.

Please read up more about Oxalic Acid on this page.
