I make bread/cake out of it

I use the pulp from carrots and zuchini to combine in a carrot cake/zuchini bread recipe:
- 2 eggs
- 1 cup of apple sauce
- 1 cup of almond milk
- 2 cups of whole wheat flour
- 2 cups of carrot/zuchini pulp
Mix together and bake on 350 degrees for 45 minutes to an hour. Test with toothpick.
I usually add raisins to it before baking and layer the top with almonds and honey.
