I adore beet juice. What should I do with the greens? Recipe ideas?

I just love pure beet juice with a little lemon, although I find the greens really bitter and don't want to dilute the deliciousness of the beet root juice. Because they are so nutritious, I don't want to waste them, so what do you suggest I do to make them paleteable?

You can try to mix the beet greens juice with cucumber juice, or celery juice and carrot juice to make them more palatable (mix the amount according to the taste you like). Throw in half a lemon or 2 small lime that will help reduce the bitterness.

I'm assuming that you're using a gear juicer since you're juicing the beet leaves. Juices extracted from a gear juicer are very concentrated and with this suggestion, you should be able to enjoy the beet greens.

If you still eat cooked foods-delicious idea

Take greens, sautée in evoo for a couple minutes until wilted. Remove from heat, add minced raw garlic, a clove or two should do unless you're a garlic freak like me. I can almost use an entire head. Mix and eat!
