Do you juice orange or lemon peel as well as the fruit?

by Virginia
(New York, NY)

What do you do with the orange peel and lemon peel when you want to juice them? Do you include the peel as well or first peel the fruit to eliminate the peel?

From Sara:

In most fruits (and root vegetables), the best vitamins and minerals are found just underneath the skin. Even though orange peel (with the albedo-the white matter under the peel) are edible in small amounts as in marmalade jam, they are rather bitter so are not included in juices. A certain ingredient in orange peel may cause a reaction in some people.

Lemon and lime peel on the other hand, are not as bitter as orange peel so I do include them whole in my juices.

My favorite concoction to boost immune system:
- 1 whole lemon (with peel)
- 1 inch of ginger, cleaned
- 1 tablespoon of raw honey
Mix this mixture in 200ml hot water and sip. Very soothing for the throat.

Happy juicing !
