Can I juice sweet potatoes and can I eat them raw?

by Susan
(Atlanta, GA)

I like to drink juice in the morning and I do it about 3 times a week. But all I juice are carrot, celery, apple and cumcumber. I wonder can I juice raw sweet potatoes?

Thank you.
Susan

From Sara:

Hi Susan, you can add more fruits/vegetables to your juicing variety. Some easy ones are, on top of what you're already juicing: oranges, tomato, beetroots, spinach, cantaloupe, pears, watermelon, etc.

You might want to check out various other fruits and vegetables.

Raw sweet potatoes contain a certain enzyme-inhibitor that may inhibit digestion of protein. This enzyme-inhibitor is diminished when cooked, making it safer for consumption. Small shredded amounts of raw sweet potato on salad may be ok, but not in bigger amounts. Therefore, it's definitely not advisable to juice raw sweet potatoes.
